Busby's, an everyday natural wine and record bar by hospitality group, PUBLIC, will open at the street level of Paddington's Oxford House on Thursday, November 2. (Check out our review article of 24 hours in Paddington, staying at Oxford house here).
A wine and cocktail bar first and foremost, the large, ever-evolving list of wine by the glass features fun and approachable drinks from Australian, French and Italian producers. Highlights include Le Juice Gamay Beaujolais, FR and Chateau Acid Chardonnay Central Highlands, NSW.
The cocktail list is short and punchy with a special nod to grape-based liquor. Taking a minimalist approach, the cocktail list consists of five signature drinks with a focus on flavours and origins of ingredients.
"We wanted to create something truly unique with the cocktail menu - these cocktails are all designed to be classics in their own right," says Stefano Catino, Director of Hospitality, PUBLIC.
"Created Aperitivo-style and crafted in 3-4 steps, the cocktail list at Busby’s reflects our minimalist and no-nonsense approach. As a natural wine and hi-fi bar, we focus on flavour and origin of ingredients and our cocktails embody Busby’s cool, laid-back feel."
Though Busby's is drinks-led, the bar menu is spearheaded by one of Australia’s most lauded Chefs - Creative Culinary Director, Clayton Wells (ex-Automata); alongside Busby’s Head Chef, Brendon Bullock.
Taking inspiration from Bambino in Paris, Bar Sway in Berlin and LA's Gold Line Bar, Busby’s is Sydney’s newest everyday natural wine and hi-fi bar. There’s a world-class cultural program in residence at Busby’s, littered with diverse and full-flavour selections from some of the finest artists in Sydney.
Guests will enjoy an extended, 5-hour residency every Thursday evening from launch on November 2 with Jonti (Stones Throw Records), alongside regular sessions with iconic selectors The Santamaria Brothers and ex-Secret Sundaze London resident Millie on Fridays. Saturdays are devoted to playing some of the world’s greatest albums on vinyl, uninterrupted, from start to finish.
Located within PUBLIC’s first lifestyle hotel, Oxford House, it joins the portfolio of new concepts from the group with 20+ properties across New South Wales and Victoria. PUBLIC’s successful recent openings include Ricos Tacos at The Norfolk in Redfern, Puttanesca in partnership with Guy Grossi in Melbourne and award-winning El Primo Sanchez in Paddington, with more to come this year and in 2024.
