Mixologist Gabriel de Melo Freire delivers a savoury-style cocktail showcasing the venue’s love of a fortified drop – the Bar Thyme Spritz.

"It has been on the menu since day one and for good reason,” Gabriel says.

You will need to prepare the syrup first, let it sit until cool and then strain it before adding to the other cocktail ingredients. 

Don’t forget to clap the garnish sprig of thyme between your hands to release all those aromas!
