AUSTRALIAN GOOD FOOD GUIDE - Home of the Chef Hat Awards

Cocktail of the Week from Brookies Gin.

Technically, it’s not drinking alone if the bartender is there!

You know the drill…it’s Friday afternoon and time to relax after a long and stressful work week.

What better way to chill out than with a cocktail at your favourite bar or restaurant? Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Welcome to our Cocktail of the Week series, where each Friday we will highlight a cheeky creation to tantalise tastebuds and set the tone for good times.

Nestled in the hills behind Byron Bay, Cape Byron Distillery – the home of Brookies Gin – keeps true to the time-honoured traditions and art of distillation, while creating spirits that capture and showcase the unique terroir of the Northern Rivers region of NSW.

Creating a new chapter in the book of Australian distilleries, Brookies’ new family member Mac. – premium roasted macadamia and wattleseed liqueur – is buttery and smooth with just the right balance of sweetness, making it the perfect ingredient for many occasions.

Think of pairing it with a coffee, as a nightcap on the rocks, or even a decadent treat with ice cream. Barrel-aged, Mac. amplifies native flavours as well as creating a connection between Brookies’ existing range and ongoing whisky journey.

Allowed to rest in an ex-bourbon cask for a few months, the result is a mature and rich variation of everyone’s favourite macadamia liqueur – darker with more complex flavours. Bursting with flavours of luxurious crème brûlée and rich caramel, the macadamia is fused with cacao, coffee and that quintessential vanilla oak finish.

Try this cocktail recipe for the Byron Fling…ideal for warm Spring days and hot Summer nights with a hint of passionfruit and topped up with sparkling wine and soda water. Don’t forget to garnish with edible flowers to make it as pretty to look at as it is to drink.
