Conveniently located in the Grand Hyatt Melbourne on Collins Street, Collins Kitchen is all about food cooked over smoke and flames, using only the finest local ingredients. Reimagining the classic Australian barbeque, the menu is purely spectacular from traditional American-style smoked ribs and meat to wood-oven roasted fish and vegetables cooked to perfection; all paired with local Australian and New Zealand wines from winemakers who are as passionate about their craft as the Chefs are about the food.
Set in a modern open plan layout creating an intimate and relaxed escape from the bustling CBD, perhaps choose The Pineapple cocktail to get the party started.
This refreshing drink, created by mixologist Amell Jiang, is the perfect Summer concoction to evoke memories of lazy days spent socialising with friends.
"We are always excited to create new drinks and new concepts, but naming them is not our forte,” Amell confesses. "That is why this cocktail is simply called The Pineapple.”
With sustainability a priority in both the front of house and back to the kitchen side, this drink was created using the whole pineapple from the juice to the leaves for garnishing, resulting in zero waste.
"This is something we will continue to do as we brainstorm new dishes and drinks.”
Try this cocktail on a Friday afternoon to relax after a long and stressful work week. Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.
