Inspired by the Beach Boys’ iconic song Kokomo, chill out in tropic holiday vibes at this chic, relaxed poolside eatery nestled in Peppers Beach Club; sip a cocktail and peruse a menu offering small and large share plates sure to tempt all tastes.
Mixologist, Harriet Rae Stalker recommends sipping a Y’know What I Green/Garden Fizz cocktail while chilling out poolside:
"Nowadays many cocktails have become over-complicated and consistently blue. The reason behind this cocktail is to highlight simple some may say old school methods of extracting natural flavours and using products which are readily available and enjoyable, if I do say so myself a much ‘healthier option’ than buying syrups and cordials full of nasties,” she explains.
"This cocktail is simple yet elegant, fresh with a hint of sweetness which is well balanced and not overpowering allowing you to appreciate each layer of flavour.”
This cocktail is actually a new and improved 2.0 version of the cocktail Harriet won her first-ever cocktail competition with!\
"This drink will always hold a place in my heart as it was terrifying having all those incredible people from the industry who I was inspired by and looked up to watching and judging my skills!”
Originally this cocktail was called Y’know what I Green, which is a play on words Harriet and a couple colleagues came up with as a joke!
"I am originally from Chester in England and I would always come out with some English slang which baffled my friends and colleagues and every time I would say ‘Y’know what I mean right’ as a way of checking they know what I mean… no pun intended.
"While picking apart a bunch of names ending each reason with ‘Y’know what I mean right’ until after a few drinks and laughs we ended up with the name ‘Y’know what I Green’ - green due to my unhealthy obsession with some sort of green juice to start my shift.”
