What better way to chill out than with a cocktail at your favourite bar or restaurant. Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Cocktail of the Week from Olivette Mixologist Cameron Esson 

Head to Olivette on Fitzmaurice Street in Wagga Wagga to discover an intimate, underground whisky cocktail bar that whisks you away to a sophisticated era of refined revelry. Inspired by the mystique of a speakeasy, Olivette has crafted an exclusive experience where guests can indulge in a carefully curated selection of rare and expertly crafted cocktails, fine whisky and tapas-style bites, all wrapped in a sense of secrecy and exclusivity.

Mixologist Cameron Esson recommends trying the Last Boy Scout cocktail:

"This cocktail transports the drinker to the edge of a roaring campfire, in the heart of a wild pine forest,” Cameron explains. ”The whisky has been infused with brown butter and housemade shortbread to mimic the biscuit layer of a S’more.

"We then infuse the Cocchi Torino with two types of raw cocoa giving the drink a rich chocolatey finish. The combination of our S’mores garnish, Laphroaig mist and tree trunk serving board give the ultimate boy scout experience…adult edition!”

This cocktail is served tableside, sprayed with the Laphroaig mist to bring the drinker’s imagination to the edge of the campfire. It is garnished with Olivette’s secret frozen inverted S’mores – a housemade marshmallow, stuffed with chocolate praline and then frozen. 

It is flamed at the table for the ultimate sensory-heightened nibble to enjoy alongside your cocktail.
