Treat yourself to oysters, drinks and views at Pearl + Co, situated at the water's edge on Victoria Dock in Hobart. This stunning waterfront bar and restaurant dishes up floor-to-ceiling adjustable windows to watch boats glide gracefully into the marina, while chilling out on couches both inside and on the sunny deck, as well as bar seating and cosy tables.
Mixologist Ian Humphreys delivers his cocktail recipe for Stop Brambling On, using in-season and delicious blackberries, layered with notes of Chambord and Sloe gin for a super complex and harmonious drink.
"I’m known as a bit of a talker so the name was a bit of a fun combination on a bramble shrub and my natural gift of eloquence,” he explains.
Pair this cheeky concoction with plates on the menu such as oyster shooters with vodka, tomato juice, tabasco and lemon to start, followed by beef short rib, mashed lemon potatoes, beef jus, crispy Swede and roasted vegetables.
