Made using Soju – a clear, colourless distilled alcoholic beverage popular on the Korean Peninsula – this creative cocktail also features a subakba, which is a Korean popsicle, as either a garnish or to be devoured whole.
Usually consumed neat, Soju can range in alcoholic content from 12.9% to 53%, although since 2007 low-alcohol Soju has become more popular at around 20%.
Mint, lemon and edible flowers make this cocktail as pretty in the glass as on the palate – for a sweeter experience, melt your popsicle into your cocktail as you drink, or simply eat it whole separately!
