As the evenings turn chillier and the couch is looking like a cosy alternative to Autumn evening walks, Celebrity Chef Luke Nguyen delivers the ultimate dinner recipe with an unexpected wine pairing.

As a Maison Lanson Ambassador, Luke has created steamed Murray cod with shiitake mushrooms and black bean sauce to accompany a glass of newly launched Le Black Création Lanson Champagne.

The wine’s fresh and elegant style complements the delicate flavours of the steamed cod, while its fine bubbles enhance the umami-rich black bean sauce and cleanse the palate between bites.

Combining a sense of heritage and savoir-faire, Lanson has been perpetuating for more than 260 years, this Champagne enhances the character of each harvest through the tailored work combining creativity and precision.

Each bottle of Le Black Création comes with a number in reference to the number of harvests that have taken place since the House was founded in 1760. The wine also reflects the diversity of terroirs in Champagne, the unique colour palette available to compose blends in line with the Lanson identity and the right balance gifted by nature.

Luke became Lanson’s Australian Ambassador in December last year, with French-Vietnamese fusion being a common and delicious combination, the partnership is one that resonates on multiple levels.

Luke’s passion for gastronomy is rooted in his family’s past, just as Maison Lanson draws on its own family heritage, and Luke has also hosted aligned TV shows, ‘Luke Nguyen’s Vietnam’ and ‘Luke Nguyen's France’. 

Luke says: "There are a lot of ties with France in Vietnamese cooking and food and many of our dishes are inspired by French cuisine. This connection is one of the many reasons why I’m proud to be collaborating with Maison Lanson and its high-quality Champagnes.”

He currently has eight restaurants around the world and is planning on opening a new Southeast Asian restaurant at the new Sydney Fish Market in 2025 in partnership with the Doltone Hospitality Group.
