When Chef Tapos Singha can’t be bothered cooking at home, he has a go-to meal that we can all relate to – Mi Goreng noodles with a fried egg on top!
At work, it is a different story as this award-winning Chef oversees the kitchens at Chef-hatted Miss Moneypenny’s in Broadbeach and Fat Freddy’s Beach Bar & Diner next door – two very different and equally popular Gold Coast dining destinations.
Offering a reinvented take on a classic American diner experience, Fat Freddy’s delivers an electric atmosphere alongside live sport, bar and booth seating and a playlist of the best rock and electric music from the 70s-90s. A hangout for the infamous, Fat Freddy’s celebrates with its wall of infamy, while a luxury gaming lounge at the rear completed a vibe focusing on fun times.
Originally from Sylhet, the tea capital of Bangladesh where 80% of the tea produced is Lipton, Tapos moved to the Gold Coast with his wife and children late last year to work for The Good Time Group Holdings.
"The team here is dedicated and has the same passion for exceptional food and service as I do. The quality of produce here in Queensland is excellent allowing the team and I to do what we do best,” he tells AGFG.
"I am passionate about sourcing the freshest local produce and showcasing it in our restaurants, incorporated into classic dishes such as our duck a l’orange at Miss Moneypenny’s and our classic range of burgers and American-style food at Fat Freddy’s.”
This diner pushes the boundaries to create a food experience that is unique, fun and modern with cutting-edge retakes on American classics – it’s always fast times at Fat Freddy’s!
"We have recently released a new menu including more classics such as our New York strip steak sandwich with Jack’s Creek Wagyu strips, cheesy gravy, liquid cheddar, pickle, crispy onion rings and Coney Island mustard.
"Another new dish, our Dorito pie, is fast becoming a favourite, served in a Dorito bag, with chilli con carne, pico de gallo, black beans, Mexican cheese and crème fraiche,” Tapos explains.
Ask anyone on the GC what is the real reason they head to Fat Freddy’s and you’ll get the same answer – the Big Kahuna burger. This beast of a burger has the lot with a smashed patty, hickory bacon, American cheese, dill pickle, cheesy gravy, pickle mayo, liquid cheese, shallots and smoky BBQ sauce, served on a brioche bun with shoestring fries.
Luckily for hungry AGFG readers, we have the recipe here; wrap your hands around this bad boy next time you need a fast-food fix!
