Rustica Sourdough Bakery Opens in Brighton


One of Melbourne's favourite sourdough bakery and cafe groups, Rustica, has just opened its newest venue, this time in Brighton on the corner of Hampton and Pine Streets. 

It wasn’t that long ago though in a 2012 Fitzroy setting, that founder and renowned baker, Brenton Lang opened his first Rustica. Instantly recognised for its traditional use of sourdough techniques in artisan bread and pastries, Rustica quickly became one of the most successful and recognised bakery cafes in Melbourne.

Forward to November 2023, which marks the fifth Rustica bakery and cafe in Melbourne for founder Brenton and director Drew Gibbs to bring their signature artisanal baked goods and pastries to the leafy suburb. The 125-seater cafe is set to become a local gem offering a selection of pastries, coffee and brunch. 

"We are incredibly excited to bring the Rustica brand to the Bayside community. We see Rustica Brighton as the perfect companion to the breezy lifestyle. Whether you’ve popped to the beach, gone for a bike ride or are simply out and about, we can’t wait to be serving up breakfast, brunch and bakery treats to locals,” shares Brenton.

The kitchen team, led by Head Chefs Sidney Tor and Sam Tacussel, will highlight the familiar Rustica feel and flavours that patrons know and love with some new accents, bringing a breath of fresh air to the beachside suburb.

"Rustica Brighton will focus on fresh seasonal produce, cooked to perfection. The menu is uniquely Melbourne with a diverse offering of breakfast and lunch available all day,” say Sidney and Sam. 

Dine-in menu highlights will include: 

Lemon curd French toast 
Prosciutto and peach toast
Lobster and prawn Benedict

Rustica Brighton’s counter display will house a range of housemade bakery treats that can be found including Portuguese tarts, maple-glazed crullers, passionfruit and white chocolate eclairs and twice-baked almond croissants. 

Rustica Brighton is open Monday-Friday and caffeinating locals from 7am -4pm and 8am-4pm on weekends.
