Australia’s beloved The Cheesecake Shop is now almost 24 years old and celebrating more than 225 outlets throughout Australia and New Zealand.
Embarking on a journey of continual product innovation, The Cheesecake Shop is proud to unveil a modern interpretation of a beloved Australian classic this January, the Red Velvet Cheesecake Lamington.
Which leads us to ask … what is red velvet anyway?
We’ve seen iterations from red velvet cupcakes to red velvet doughnuts so naturally a red velvet cheesecake lamington makes sense.
What does red velvet taste like? How would you describe it? Upon doing further research we are happy to conclude that it is a combination of a vanilla base, with notes of a bittersweet and very light chocolate undertone. It's then the cream cheese frosting that brings it together to create that taste profile we know and love.
Origins of red velvet:
Historians believe that red velvet cake originated during the Victorian era. Cake flour hadn't yet been invented and so they used vinegar as a way to tenderise cakes. The combination of vinegar with non-Dutch processed cocoa powder, made the cake turn a reddish-brown hue.
It was in the early 20th Century, that the first recipes labelled as red velvet cake were published and those in the Southern United States added buttermilk - an essential ingredient these days to the classic red velvet flavour.
However, at some point before World War II, the process for producing cocoa powder changed, which no longer made it red. The addition of red food dye was included to continue the reason behind the name, 'red' velvet.

While many of The Cheesecake Shops are independently owned and operated, to ensure that all bakeries remain relevant and as loved today as they were in the nineties and noughties, significant store upgrades have been carried out including new menus, state-of-the-art refrigeration and modern looks. However, this rollout of carrying the brand into the 2020s also includes menu updates, modern baking innovations and a constant stream of new cake creations.
Creating a bespoke adaptation of the classic Aussie dessert, The Cheesecake Shop's Red Velvet Cheesecake Lamington is a dense yet luxurious treat combining layers of red velvet cake and the franchise’s signature baked creamy cheesecake mix, complete with a rich chocolate coating and delicate dusting of desiccated coconut.
