Secret invitations and muted whispers are the new flavour combinations at Sydney's favourite Mexican cocktail bar, El Primo Sanchez.
Speakeasies used to refer to illicit establishments that sold alcoholic beverages throughout the 1920s and even into the early 1930s prohibition era of the United States. These days, in Sydney the speakeasy is reference to an uber-cool intimate and exclusive experience, called La Prima, tucked away behind a hidden door inside El Primo Sanchez.
The 10-seater, 20-standing bar can only be accessed by invitation from staff, or by those lucky enough to stumble upon it. Once inside, guests will find themselves immersed in an atmospheric setting, with candlelit ambience, old-school Mexican music, walls adorned with agave and a dedicated female bartender crafting the drinks.
A special rotating menu of curated cocktails by the Maybe Sammy team adds to the allure, with the opening menu including the Encanto with Patrón Silver, dry Vermouth and cherry soda; Perfume de Gardenias with Patrón Reposado, peach and citrus cordial and jasmine soda and Pastel de Planto with Patrón Reposado, banana and cinnamon cordial, salt and agave.
The secret speakeasy will transport you straight to Oaxaca, Mexico. Guests have the option to order select offerings from the El Primo Sanchez menu, curated by Head Chef Alejandro Huerta.
Alejandro’s menu brings a playful twist to Mexican classics, including guacamole with fermented green tomato, chilli crunch and totopos, pink ling with baja base, pineapple pico de gallo and coriander and the Blackmore Wagyu barbacoa with salsa roja de miso, burnt onions and shiso.
Renowned for its focus on tequila, mezcal and playful yet elegant takes on Mexican classics, El Primo Sanchez has established itself as Paddington’s go-to venue for long lunches, dinners and drinks that stretch late into the evening.
