Hyde Paradiso has collaborated with The Botanist Gin to feature five cocktails celebrating the versatility of Islay’s only boutique gin with 22 hand-foraged botanicals.
Mixologist, Cameron Barnes says his favourite creation is the Elderflower Collins – easy to make, deliciously delicate and perfect for the year-long Summer weather the Gold Coast offers.
"The addition of our very own pineapple mint, foraged fresh from our herb garden, takes this everyday sipper to another level,” he explains. "This cocktail lifts The Botanist Gin floral bouquet in a drink style anyone could enjoy.”
While this version is garnished with a sprig of mint, simply select any garden herb – rosemary, thyme, sage etc – along with citrus fruit such as lemon, mandarin and grapefruit for your own foraged cocktail variation.
