Mixologist Edward Seffty delivers the Som Tum Sally cocktail as a tart Summer jam with a kick of chilli to keep the juices flowing – ideal for hot nights with a citrus breeze.
"Som Tum is actually a traditional Thai sour and spicy dish which I have taken flavours from and put into this cocktail,” he says. "Our venue Kiin – the Thai word for ‘eat’ – delivers modern Thai food. Inspired by the fresh and innovative dishes in our kitchen, I wanted to create a drink that complements our cuisine.”
Using mandarin and chilli gin along with ginger liqueur and bloody essence syrup, this cheeky concoction is the perfect accompaniment to an Australian Summer evening, it’s tart, the mandarin is fresh and the chilli surprising!
