Cocktail of the Week from Paripe’s Pablo Morales

Technically, it’s not drinking alone if the bartender is there!

You know the drill…it’s Friday afternoon and time to relax after a long and stressful work week.

What better way to chill out than with a cocktail at your favourite bar or restaurant? Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Welcome to our Cocktail of the Week series, where each Friday we will highlight a cheeky creation to tantalise tastebuds and set the tone for good times.

Cocktail of the Week from Paripe’s Pablo Morales

Located in the heart of Chippendale’s trendy Kensington Street, Paripe is the first and only authentic Spanish tapas bar in the Sydney CBD with a strong focus on traditional products. From the kitchen pantry to the bar shelves, almost every item on the menu is sourced from handcrafted producers from all over Spain to bring genuine Spanish culture to the Sydney lifestyle.

Mixologist and owner, Pablo Morales recommends trying the Old Pedro Ximenez cocktail to get any fiesta started:

Cocktail of the Week from Paripe’s Pablo Morales

"This is the perfect cocktail for Old Fashioned lovers,” he says. "I called it the Old Pedro Ximenez for my two favourite beverages – the classic cocktail (Old Fashioned) and my favourite Sweet Sherry PX1999.

"The majestic and simple mix of these two beverages resulted in the birth of the Old Pedro Ximenez for a Spanish twist on the Old Fashioned.”

To finish the drink, put the smoker on top of the glass with cherry wood and smoke the cocktail.
