You know the drill…it’s Friday afternoon and time to relax after a long and stressful work week.

What better way to chill out than with a cocktail at your favourite bar or restaurant. Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Find where the flavours of South-east Asia artfully collide at Rumble restaurant on Pyrmont Street in Pyrmont. Located on Level G Harbourside of The Star, Rumble is the latest spark in the casino’s dining precinct, chasing bold flavours that bring punchy tastes to complement quality local produce; expect a warm, immersive experience in a beautiful setting of natural quality materials and traditional cues.

Mixologist Patty Chareonsuk recommends trying the Piquancy cocktail – named after flavours which are sharp, spicy and tangy – all found in abundance in this drink.

"I love this drink because it differs from your usual cocktail. It encapsulates the flavours of Southeast Asia and incorporates the flavours I grew up with from back home in Thailand. It’s a nice balance of sweet, spicy, salty and sour,” she says.

Based on flavours found in a Thai dish called larb moo, which is full of umami and spice, Piquancy is best enjoyed before a meal as an aperitif.
