What better way to chill out than with a cocktail at your favourite bar or restaurant? Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.

Welcome to our Cocktail of the Week series, where each Friday we will highlight a cheeky creation to tantalise tastebuds and set the tone for good times.

Set in idyllic beachside Lennox Heads, Shelter on Pacific Parade beckons as a home away from home for locals and visitors alike. Whether passing through or part of the community, seek shelter at this charming restaurant - where bifold windows open to provide ocean views and allow balmy breezes to waft into an interior vibe of well-set tables and linen – ideal for lingering over a leisurely meal with that special someone.

Cocktail of the Week from Shelter

Shelter mixologist, Kobi recommends the King Island Cosmo cocktail for its subtle flavours – the mayde tea gives the drink a basket of aromatics, while the moonshine gives structure and the aquafaba a nice silky texture.

"If you like Cosmos, you will like this,” he says. "We thought it was about time we brought back the Cosmo, after Carrie Bradshaw and the gals ruined them in the 2000s.”

The cocktail showcases Martha’s Moonshine from King Island Distillery, while the other ingredients are a twist on a Cosmo, swapping the cranberry juice for mayde tea brew.

"We had the idea for this drink in our heads for quite a while. We tried it with Pisco, vodka and gin but all fell short, until the Moonshine came into our bar. It was a perfect fit, strong yet gentle.”
