Technically, it’s not drinking alone if the bartender is there!
You know the drill…it’s Friday afternoon and time to relax after a long and stressful work week.
What better way to chill out than with a cocktail at your favourite bar or restaurant? Alternatively, you could take the party home and concoct the perfect drink to usher in the weekend.
Welcome to our Cocktail of the Week series, where each Friday we will highlight a cheeky creation to tantalise tastebuds and set the tone for good times.
Fine without the fuss…that’s Sixty Smith restaurant and bar in Collingwood. Join the lively buzz of conversation at this trendy Smith Street venue and make yourself at home in plush surrounds of blue velvet chairs, gilded mirrors, bar stools and potted greenery, setting the scene for relaxed drinking and dining with family and friends.
An extensive drinks list makes sure everyone is happy and mixologist Summer delivers big with her signature Mint cocktail – a twist on the classic Southside concoction.
Clarified lime juice and a mint oleo saccharum balance the trusted flavours of gin in this near-see-through sipper – perfect for warm afternoons and romantic evenings.
There is a little bit of preparation required for this drink – the mint oleo saccharum needs to be left for at least 14 hours or until the sugar looks like it is melting and the clarified lime juice also has a few steps to ensure the right consistency.
Perhaps pair your cocktail with modern share plates found on the menu at Sixty Smith such as pork belly with a garlic ginger glaze and sweet pumpkin, or calamari, black garlic aioli, ponzu, yuzu and soy sauce, white fungus and rice paper crackers.
