Discover Guy Turland’s Favourite Winter Ingredients and Top Tips + his Marry Me Salmon Recipe

Winter for Aussie Chef, Guy Turland is all about slow cooking.

We’re talking soups, braises, steaming and poaching – warming ingredients that are healthy and make you feel like you’ve just had a big cuddle!

Tassal Seafood Ambassador, Chef and owner of The Depot Cafe in Bondi, Guy talks exclusively with AGFG about his favourite Winter ingredients and shares not only tips and flavour combinations, but also his Marry Me Salmon recipe which is sure to become a firm family dinner winner.

"My favourite ingredients for Winter are Tassal Cone Bay barramundi and Tassie salmon, paired with beautiful Winter veggies like squash, carrots and potatoes. They’re the perfect comfort food companions,’ he explains.

"What’s not to love about Winter cooking? It’s time to slow down, cook with unique ingredients and use great techniques to create really special meals. These meals are designed to make you feel comfortable, warm and completely content on a cold night. I love Winter cooking because it encourages a focus on technique, which is such a nice and relaxing process.”

Guy is really enjoying slow-cooking salmon at the moment and says one of his go-to recipes is this Marry Me Salmon dish, which involves Tassal Tassie salmon cooked down in cream, sun-dried tomatoes and loads of herbs.

”It is just so beautiful and indulgent. I’m also loving focusing on Winter vegetables, like a stunning kimchi and slow-roasted pumpkin soup, served with a big loaf of bread and some grass-fed butter.”

Winter cooking is the time to experiment according to Guy:

"Look for new ingredients, find new recipes and spend a really nice, relaxing time in the kitchen focusing on technique and creating food that brings you and your family so much joy. It is also a great time for batch cooking and using leftovers creatively.”

Instead of preparing two fillets of Marry Me Salmon, why not do four or six?

"Then, place the leftover salmon in the fridge and flake it for wraps the next day, or toss it through pasta for tomorrow night’s dinner.”

Winter is about getting creative and making sure the ingredients and the time you spend in the kitchen are maximised for comfort and joy.
