"Curry always sounds more exotic – and tastes more exotic – than it really is in terms of work for the kitchen. This is my go-to variation where all the theatre is in the toppings, but there is depth of flavour here, too,” says Dr Kurscheid.
"I'm using pollock here because it was inexpensive and unfashionable but still good – all fish to my mind is good as long as it is very fresh. The sauce, though, works well with other fish fillets, which are quick and easy to cook.”
