Cooking is about creating something delicious for someone else…on Thursday, November 3 it’s the man in your life’s turn, as we celebrate National Men Make Dinner Day!
We asked iconic Kingscliff restaurant Fins’ Head Chef Steven Snow for not only a recipe but also the best way to win a woman’s heart with food.
"You can win more than a heart when you include some or all of the following – oysters, sashimi, chilli, bubbles and dark chocolate,” he says. "Love good ingredients! Just add candles and conversation or music and remember everything tastes better alfresco.”
Along with wife and business partner Morgan, ‘Snowy’ as he is affectionately known has been in charge of the kitchen at the seafood restaurant in Salt Village for more than 30 years, dishing up an innovative and creative menu in classy surrounds of wooden plantation shutters, potted greenery and moody lighting.
It’s not just at Fins where a romantic mood sets the table – Steven cooks almost every night when not working, sometimes a little difficult with an 8-year-old daughter.
"We always set the table with fine china, a tablecloth and dine by candlelight – this is a daily ritual in our house.”
He offers up a barbequed whole fish with chilli as a way to win your woman’s love and devotion on Thursday, saying we eat with our eyes first and this recipe looks really good.
"There is something about a whole fish that feels more special, a bit like picking your own vegetables from the garden and cooking them. Whole fish, cooked on the barbeque and shared has WOW – it has more flavour than fillets and inevitably you end up eating with your hands.”
After notching up brownie points with Morgan this week, Steven will be working on expanding the offering at his wedding and events venue Fins at Plantation House with some exciting pop-up signature experiences.
"I will also be cooking in Fiji and France as a Guest Chef, so let’s see what ideas I can pack in my suitcase and bring home to Fins!”
