As far as a must try dish…Chef Simon Ford says the ethos of his business is to showcase the wonderful primary produce available on the island and highlight the hard work and talent of its farmers and producers.
"As a Private Chef, I tend to deduce what a client wants in regards to format and style and completely tailor dishes and menus to their taste and requirements. Marefold is a luxury brand and therefore, I will often include my own personal favourites as a complimentary inclusion within their menu as a small taste plate (in the style of the degustation format),” he explains.
"As an example - hibachi grilled abalone, whipped brown butter potatoes, kaffir lime butter and katsuobushi.”
What's your point of difference:
"I guess the point of difference is that I am completely bespoke as the client chooses format and ingredients based on seasonal availability and my produce is harvested on the day of the event from vegetables being pulled from the ground and salad leaves harvested, to oysters being pulled from the water by my oyster farmer.”
What is a fun fact that not many people know about the venue?
"As far as what people may not know is that I was a Private Chef to some of the most affluent and influential people in the world. Working on super yachts, private estates and planes. I plied my craft in Europe, the Middle East, Asia and the Pacific - I have also worked alongside some of Europe's top Michelin-star Chefs as they entered the private sector too.”
