Anything incorporating local Chef Kurt Lovell’s breads – he has mastered gluten-free bread that doesn’t taste or feel like other gluten-free bread. A current hit is the cashew brioche French toast, with ginger and a ruby grapefruit, blueberry and lemon balm salad.

Project Salubrious is changing the way many think of ‘gluten-free food’. For Kurt, flavour and using high-quality, nutrient-dense ingredients come first – everything being free of gluten, dairy and refined sugar is just a natural extension from his background.
This is not a gimmicky, or ‘health food’ café – gluten-free diners also want burgers, bacon and indulgent desserts too!
What is a fun fact that not many people know about the restaurant?
While definitely leading with the menu, setting things up to be better for future generations is everything to Kurt and Project Salubrious.
Sustainable and reclaimed materials have been used throughout the build – recycled bridge timber, eco-friendly flooring and roofing materials and recycled plastic in the chairs.
A passion for helping people learn more about food and get excited about it runs across many facets of the business – cooking classes, Kurt’s passion for training the next generation of Chefs, introducing diners to the farmers behind their food and a close tie with the next-door early education centre run by his wife.
The café prepares great food for the kids and eventually will be involved with cooking classes and visits from farmers.
