Shuck Yeah! Hickson House Releases Oyster Shell Gin


Born in the heart of the Sydney Harbour, uniquely Australian distillery Hickson House has released a new Oyster Shell Gin, deliciously capturing the essence of the pristine Australian coastline in a bottle.

Distilled using a host of native botanicals and infused with crushed Sydney rock oysters, the resulting small-batch gin has a smooth and creamy texture with a delicate hint of salinity and vibrant citrus notes.

Made using Hickson House’s multi-award-winning Classic Dry Gin, the savoury spirit uses native Australian ingredients including locally sourced Sydney rock oysters. The liquid’s subtle salinity is perfectly complemented by seaside botanicals and notes of citrus including old man saltbush, seaweed and tarragon as well as bright citrus notes from native finger lime and ruby grapefruit.

The conception of the premium craft gin follows a heightened demand for artisanal spirits with distinct flavour profiles that unleash an unique experience during consumption.

With a bright citrus and ocean spray aroma, the flavour profile shines with Juniper, citrus and a delicate saline and subtle minerality. The resulting finish is long, dry and slightly salty, with lingering herbal and mineral notes.
