Those seeking a night of culinary excellence with rum taking centre stage, head to the Champagne Bar at Sofitel Sydney in Darling Harbour for a one-sitting only rum paired dinner showcasing the cuisine of award-winning Executive Chef, Sam Moore.
In a further collaboration with local rum distillery, Brix Distillers, head to the Sofitel on Wednesday, November 22 for as four-course menu, paired with a taster from the core run range and the Champagne Bar Marseille-inspired spiced rum. Representatives from Brix and Sam, who heads the kitchen at 15-hatted Atelier By Sofitel restaurant, will guide guests through the dining experience.
"Inspired by the success of our new Marseille Inspired Spiced Rum we have created a unique dining experience to showcase the flavours and qualities of our bespoke rum blend, alongside a range of other blends from Brix,” says Jarod Senior, Sofitel Food and Beverage Operations Manager.
"Rum actually pairs well with a wide range of foods,” Sam explains. "The right combination of rum and quality ingredients can create a perfect balance of flavours.
"Each type of rum, whether it’s dark, light or spiced, has its own unique characteristics which can be paired with different types of cuisine to create a memorable dining experience. Spiced rum such as our Marseille Inspired Spiced Rum opens up a world of possibilities with sweets and desserts”.
Expect dishes such as coral trout crudo, with mango, avocado, chilli and coriander; Kurobuta pork cutlet grilled over coals, peach and fragrant herbs, honey and lavender roasted duck, beetroot, caraway and blackberry; and to finish milk chocolate pave, vanilla and roasted macadamia.
