As well as poaching, a proper brew is great to rehydrate sweet, dried fruit – such as the cranberries, raisins and grapes used in this dish – and to add a savoury flavour. The tea-soaking liquid is then repurposed as the basis for the stock in which to poach the chicken breast.

The gentle poaching technique makes the chicken juicy and succulent; once poached the liquid can then be frozen and used later as a beautiful chicken stock. With radicchio and lettuce as the base, this is a vibrant salad with plenty of texture from the dried fruit, pumpkin and sunflower seeds, walnuts, celery and grapes; dress it with homemade mayonnaise with a touch of Dijon mustard.
