What is Nikkei? The New Japanese-Peruvian Fusion Trend to Hit Sydney


Japanese-Peruvian fusion known as Nikkei cuisine has made its grand entrance into Walsh Bay, Sydney.  Never heard of Japanese x Peruvian cuisine before? That’s okay – it’s a relatively new, albeit catching food trend and it may be here to stay!
 
At least, we hope so if Executive Chef and co-owner Hector Chunga and Luis Guzman continue to innovate with their unique fusion style. 

Having officially opened in June 2023 under the name Lima, Chef Hector wanted to connect to his personal heritage and dive into his culinary specialisation.

The 100-seat restaurant is designed to reflect the moody ambience of Lima's bohemian Barranco district bars, mingling seamlessly with Sydney's stylish aesthetic. Graffiti murals, an enchanting ring of cherry blossoms above the bar and moody LED lighting add to the immersive experience, allowing guests to embark on a gastronomic journey that starts with the eyes.

Lima's menu offers an impressive array of Nikkei dishes, from a wide range of ‘ceviches’ and  ‘tiraditos’ (Peruvian-style sashimi) to charcoal grilled skewers known as 'anticuchos', giving patrons a taste of the evolution from Folklore to Lima. Niching into the Peruvian-Japanese fusion adds a fresh and innovative flair and ties in with Hector's passion and heritage, providing a deeper connection to the food being presented.

"We wanted to create a restaurant that serves great food and tells a story," adds Hector. "Each dish on our menu represents a chapter from the culinary history of Peru, Asia and now Japan. By dining with us, our guests are partaking in a centuries-old tale of culinary fusion, enriched by this new direction."
