Chris Harvey, Sommelier at this 12-hatted restaurant, recommends pairing the Mount Ashby Estate 2017 Merlot with dishes on the menu such as twice-cooked Gruyère soufflé, with fine herbs and salad; or slow-cooked pork belly, Mount Ashby Rosé jus, cauliflower purée and crackling. 

The 2017 Mount Ashby Merlot exhibits typical cool climate characteristics of chocolate mocha and dark berries, combined with French oak overtones on the palate.
