World First Barramundi Sashimi Ready for Plating


Sashimi lovers can take their taste buds to new heights, as the maker of Australia’s original poké bowls, Finn Poke, serves up the world’s first-ever sashimi made from barramundi outside of fine dining restaurants.

The Japanese delicacy usually reserved for salmon, tuna or kingfish can now add Aussie barra to the lineup, with the new culinary delight featuring exclusively in the Byron-born brand’s poké bowl menus across stores nationwide.

The new menu star is Australian-grown in a natural environment, coming straight from top sustainable saltwater farm, Humpty Doo Barramundi in the Northern Territory to Finn Poke venues across Queensland and New South Wales.

"The hero of our poké bowls has always been fresh ingredients, so when the opportunity came up to be part of the freshest, purest way to eat the great Australian barra, we knew it was a fit,” says Jem Jacinto, founder of Jacinto Group, the mastermind behind Finn Poke.

"Humpty Doo’s premium saltwater barramundi is the perfect fish for our sashimi. The flavour is unmatched. It has firm flesh and sweet, mild flavour, which pairs perfectly with the blend of textures, flavours and freshness in our poké.”

The world-first barramundi sashimi is being served up as part of a new partnership between Humpty Doo and Finn Poke, making stores the only place locals can enjoy the new style of fish outside of fine dining restaurants.

"The sashimi is front and centre in our two new bowls - the OG Barra which is all about a mixing sweet, spice and saltiness with green chilli, pineapple, pickled ginger, coriander and rocket, topped with crispy onions and a spicy yuzu sauce, alongside the Spicy Thai Barra which as the name suggests, is a spicy bowl with a lot of punch. It mixes mango, cucumber and red onion, with fresh mint and coriander, topped with crispy onions, puffed rice and spicy Thai sauce,” adds Jem.

Finn Poke now has barramundi sashimi on offer in signature bowls OG Barra Bowl and Spicy Thai Barra, or the new ingredient can be blended with any other chosen flavours in a Build Your Own option. Foodies can indulge at Finn Poke stores in Byron Bay, Burleigh Heads and Pacific Fair on the Gold Coast and the newly-opened Southbank store in Brisbane.
