Fallapart pork meat in a tamarind and cranberry based sauce of our chef’s own creation or Salmon Hor Mok Fillet of Tasmanian salmon delicately slow-poached in a red curry sauce, wrapped in a banana leaf to seal in the flavours. This gives a hint of charring and “buttery” texture to the salmon.
