4 Mexican Recipes to Put the Arriba into Your Day!

Mexican cuisine is known for its vibrant flavours, bold spices and diverse range of dishes which cater to all taste preferences.

Mexico has a long and rich culinary history that began long before the arrival of the Spanish – there are three main influences on Mexican cuisine as we know it: the Mayans, Aztecs and the Spanish.

There are also two distinct styles from the North and South of the country – seafood is common in the North along with cheese and meat dishes such as the burrito, cabrito and carne asada. While, in the South, chillis of different varieties are on show along with chicken and cheese, particularly mole varieties and chocolate are used in dishes.

As we celebrate all things Mexican this week, here are three recipes plus a cocktail to put the arriba into your day:

When it comes to taco night, it is easy to stick to the same formula and old favourites; Matt Sinclair from Sum Yung Guys shakes things up by bringing some Aussie beef to the party and shows you how to master the art of fall-apart, slow-cooked brisket with this recipe.

A great dish to feed a crew, with any leftover brisket perfect for making delicious stir-fries, stews or sandwiches throughout the week.

This classic take on the Margarita is made using George Clooney’s Casamigos Blanco or Reposado and lime, balanced with agave nectar – its unique flavour is the result of a painstakingly slow process where the agave piñas are roasted in traditional brick ovens.

Reposado is golden honey in colour with aromas of caramel and cocoa, while the flavour has notes of dried fruit, spicy oak and a touch of sweet agave.
