For a taste of Asia, this Oh Crab Burger really hits the mark…soft-shell crab on a squid ink or charcoal bun, with crispy batter, Asian slaw and wasabi mayo, this is one for those who like a bit of heat. The crab does take a bit of preparation as you need to clean it and then wait for it to dehydrate for two hours, before deep frying in a batter made from flour and potato starch.

The crunchy slaw is a combination of green papaya, carrot, tomato, green oak lettuce and Japanese red radish pickle, marinated in vinegar, fish sauce, sugar, chilli and salt for 30 minutes to infuse the flavours.

Combining Cajun spice, salt and buttermilk for the marinade, make sure to massage the mixture into the breasts and leave overnight for the best result, so the acidity from the marinade seasons and tenderises the chicken. Mexican-style pickled jalapeños add a bit of fire to the burger, while the creamy slaw made from red and white cabbage provides crunch and texture.

Made from hemp and sunflower seeds, broccoli stems, paprika, miso paste, white beans, peas, chickpea, potato and brown rice flour, shape the mixture into patties and fry until crispy. Serve on your choice of bun with a mix of fresh vegetables such as beetroot, tomato, avocado and salad greens.
