Did you know Australia is the fourth largest truffle producer in the world? From June to September every year, we celebrate Winter’s most treasured delicacy with long lunches, truffle hunts and a range of products that add a touch of elegance to any occasion.
Restaurants all around the country incorporate these delicious morsels into recipes and dishes to tempt all palates – including Sydney’s Mode Kitchen & Bar where a carefully crafted menu packed with flavour and soul-warming meals awaits, created and locally sourced by Executive Chef Francesco Mannelli.

Delivering uncomplicated, yet memorable Modern Australian dining experiences for lunch and dinner, Mode strikes an ideal balance between a casual bistro and fine dining; with a touch of glamour from surrounds of polished wood, statement pendents and banquette seating.
From mid-June until mid-August, Mode is hosting an exclusive Truffle Degustation where guests will be treated to a menu highlighting these decadent and unique ingredients, complemented by the finest seasonal produce consistent with the foundations at the core of Francesco’s kitchen.
Expect to sample mains such as chicken ballotine, with porcini mushrooms, celeriac and truffle, before a divine black truffle tiramisu to finish.
It is his recipe for risotto acquerello that Francesco has chosen to share with AGFG, with shaved fresh truffle and truffle butter adding flavour and fragrant punch to this rice dish that will have everyone asking for more.
