Glass Brasserie, one of Sydney’s most iconic dining destinations, is entering an exciting new chapter under the leadership of newly appointed Head Chef Natalie Murphy.

From starting in the kitchen as an apprentice at 19-years-old to now Head Chef, Natalie’s journey at Glass Brasserie is a testament to her passion. Having honed her craft at the very place she now leads, Natalie is reimagining the restaurant she loves with a fresh, produce-driven menu and modern approach to dining.

Her menu showcases Australia's finest seasonal and fresh produce. To ensure diners experience the very best Australia has to offer, Natalie visits markets and suppliers each week, hand-selecting only the highest quality ingredients for her dishes.

The menu takes a modern approach to dining and the service has shifted to a shared-style, expertly crafted with simplicity in mind as Natalie’s aim is to let the produce shine through as the true hero of the dish.

The service will continue to be at an incredibly high standard and Natalie’s hope is that those enjoying dishes inspire connection and conversation over great food and wine, with minimal interruption.

Menu highlights include the Yamba King prawns and a delightful Southern Tasmanian squid - both of which have been cooked over the charcoal grill - the Gundagai lamb backstrap served with a spiced yoghurt and pomegranate mint salsa and a Summer tart made from fresh stone fruit.

For those wanting to take the decision-making out of their dining experience, Natalie’s ‘Glass Banquet’ is the perfect sampler. Priced at $129 per person, the banquet features standout dishes like a fresh seafood platter, charcoal Southern Tasmanian squid, O’Connor grass-fed rib eye, skin-on fries and chocolate and cheesecake.

Glass Brasserie is also home to one of Sydney’s most distinguished wine collections. With more than 1000 different labels from around the world, the wine list highlights unique blends as well as cult favourites.

The bottles are carefully curated and encased in a dramatic floor-to-ceiling wine wall. The wine list reflects more than two decades of expertise and curation by Head Sommelier, Mauro Bortolato. He prides himself on creating a wine list that is not only competitive with surrounding restaurants and bars but is also distinctly unique to Glass.

Of her appointment, Natalie says:

"Glass has been my home since I was 19 and stepping into the Head Chef role is truly a full-circle moment. My menu is all about refined simplicity. Elevating the best seasonal produce while honouring the restaurant’s legacy of exceptional dining.”

Of Glass Brasserie’s new direction Head Sommelier Mauro Bortolato says:

"After 20 years at Glass, this place is part of me. I’ve seen it change, grow and now, with Natalie leading the kitchen, it’s an exciting new chapter. While there are changes to the menu, our wine ethos remains the same.
