With some of Australia’s best produce at hand, armed with an unwavering passion for innovation and a fierce dedication to sustainability, it is easy to see why Connor debuted in the 2024 Chef-hat award season with a 14-hat award. Did I mention he’s also taken out the top spot for the McLaren Vale region in this year’s Readers’ Choice Awards?

Connor’s culinary prowess is nothing short of remarkable.

The sensory journey begins the moment guests arrive, with the serene beauty of the vineyards setting the tone. Don’t overlook the expertly paired wines either, it’s a true showcase of the soul of the Bec Hardy Estate (I also implore you to add on the Section 28 cheeseboard, but we’ll get to that shortly).

Sustainability is not a buzz word at Bec Hardy - it is in the very DNA of the estate. Under the guiding stewardship of one of Australia’s most decorated environmentalists and scientists, Dr Barbara Hardy AO (Bec Hardy’s grandmother), every practice is undertaken with sustainability at heart. As one of the few wineries certified by Sustainable Winegrowing Australia (SWA), Bec Hardy Wines is a testament to this commitment.

This shines through in Connor’s kitchen. Each season new suppliers are selected with the criteria of an aligned sustainability ethos. Being in a region with like-minded producers makes this a fruitful and exciting quest. Beyond the produce, waste reduction is paramount in the kitchen and waste management is methodical.

If it can’t be made in house, or sourced from a local, ethical and sustainable supplier, it doesn’t make the cut. The exquisite cheeseboard mentioned earlier, features a series of housemade accoutrements, notably crackers made with cheese offcuts. Oxidised red wine becomes housemade red wine vinegar and there’s a housemade bread that will haunt your dreams.

The humble and holistic approach to dining is one we hear a lot about, yet none execute it quite like Connor and his team. You can feel their collective passion with every moment you get to spend at The Kitchen.

Connor’s methodical, yet imaginative approach to the development of his menus means each dish is an expression of seasonality. When asked about balancing excellence and innovation, Connor’s team took centre stage. A deep-rooted trust and respect is evident - everyone working together to execute his visions, so perfectly orchestrated like a finely choreographed ballet. No easy feat. This balance between innovation and execution has become a hallmark for Connor and his team, culminating in a faultless journey for the guests.

You could relate a dining experience at The Kitchen at Bec Hardy as going to a close friend’s house. Relaxed, comfortable and almost familiar. Friends touting a 14-hat are certainly the type of friends I would like to be dined by!

This new-age approach to fine dining, where the pretences of tradition play second fiddle to the enjoyment of the experience is all part of Connor’s bigger picture and a testament to the future of Australia’s dining scene.

With Chefs like Connor at the helm, we’ll be in safe hands.

A section of Connor’s repertoire, one that heralds the basis of his most iconic creations, is his penchant for desserts. I would be remiss to not mention his iconic ‘Summer Honey Surprise’ - a delectable confection made as an ode to bees - comprising a mango semifreddo, macadamia pannacotta and honey cremeaux, all delicately presented in the form of a honeycomb. Or, his smoked ‘Ice Cream sanga’ - think paperbark smoked ice cream with dulce de leche, wedged between slabs of perfectly bitter dark chocolate.

Akin to the genius of dessert legend, Will Goldfarb, Connor tests the boundaries of desserts. Notably, pioneering the outlandishly popular ‘Candyland’, an intricate event created by Connor that flexes his creative muscle in a fantastical dessert degustation.

The whimsy of Connor’s visions isn’t to be taken lightly. There is some serious talent here. While simplicity is key, the technicality behind each dish needs to be applauded.

Connor’s journey so far has been a testament to the power of passion and perseverance. From early days as a Pastry Chef to now navigating the rapidly rising Kitchen at Bec Hardy, it’s a journey that has only just begun.
