Get Your Cheese on with This Culinary Collaboration Event


Fabbrica Darlinghurst is excited to announce a neighbourhood collaboration with Penny’s Cheese Shop on the evenings of Tuesday, April 1 and Wednesday, April 2. 
 
Penny Lawson, cheese judge, cheesemonger and Potts Point’s Queen of Cheese, set up Penny’s Cheese Shop in 2018. She quickly became a much-adored local legend, championing Australian producers, with an impressive selection of international cheeses, condiments and those infamous cheese toasties.
 
With a mutual love and respect for artisanal produce, Penny, Love Tilly Group’s Group Executive Chef Scott McComas-Williams and Fabbrica Head Chef Damiano Balducci have regularly joined forces over the past year, plating up specials of gnocchi, pasta and the occasional snack, influenced by Penny’s cheese of choice. 
 
Following the overwhelming popularity of these specials, the Fabbrica Darlo team is gearing up to present a two-night-only set-menu, devised using a selection of Penny’s Cheese Shop’s current favourite cheeses.

Penny will be on hand for the night to chat to guests about the art of cheesemaking, with Scott and Damiano on the pans.
 
Penny says: "I’ve really enjoyed collaborating with Scott and Damiano. Their interest in local producers, exploring the seasonality of cheese and creating dishes that capture the flavours so well has been exciting and absolutely delicious.

"I’ve been lucky enough to pop into Fabbrica Darlo to try them all and can’t wait to taste the new dishes for our event together.”
 
Scott adds: "This is one of the most exciting events for us this year, creating an amazing menu, championing Penny’s incredible cheeses, our handmade pasta and the beautiful local community we are both part of.

"In workshopping the fortnightly series with her last year, we trusted Penny with her suggestions to create some super special dishes and this night will be no different.”

Guests can expect an eight-course feast ($90), including zucchini flowers with fresh goat curd and hot honey; gnocchi with Milawa King River Gold; hand-rolled ravioli with Berry’s Creek Oak Blue, pear and brown butter; and for dessert, Pecora Dairy Ewe’s Curd cheesecake.

There will also be an optional wine pairing available ($60), curated by Fabbrica’s Beverage Manager, Jade Febvre. 
 
The full menu can be viewed when booking, unfortunately dietaries (particularly dairy allergies) cannot be accommodated on this occasion.
