Fijian Kokoda – which is very similar to ceviche – is one of the most popular dishes in Fiji, made from freshly caught local fish such as walu (Spanish mackerel), marinated in lime juice and fresh coconut milk, combined with an assortment of fresh ingredients such as onion, capsicum and more.

This is a very traditional cooking class where you’ll learn everything from how to dehusk a coconut, scrape out its fresh and press it for milk, along with how to cook prawns in bamboo shoots over an open fire – a local method of preparation that has been passed down through generations of Fijians.
