Sydney’s highly anticipated food destination, Hay St Market at Paddy’s, opens its doors today, adding an exciting new experience to the Haymarket precinct.
This Sydney-first concept is a celebration of food, culture and community, bringing together a dynamic collection of traders under one roof in the heart of Haymarket.
More than three years in the making and spanning 3000 square metres of Paddy’s Markets, Hay St Market is home to more than 48 traders offering more than 25 cuisines. At its heart, it’s an open, bustling space that shifts from morning to an after-dark foodie destination. Visitors can snack on the go, kick back with a bite, grab something for home or chill out at Cans & Crates or Traders Bar!

This multi-million dollar transformation is set to revitalise the Haymarket precinct, increase tourism and create more than 300 jobs.

Culinary icons come together and unleash their passion:
World-renowned Chefs and culinary legends, including Luke Nguyen - celebrated chef, restaurateur, author and TV presenter, alongside Australian Indigenous Chef, TV personality and restaurateur Mark Olive, are infusing Hay St Market at Paddy’s with their passion, flair and expertise.
Together, they're bringing their unique culinary visions to life, creating an unforgettable food experience and will launch their own concepts within Hay St Market at Paddy’s. Visitors can expect to sample Luke’s father’s closely guarded pho recipe at Pho Chu Lap with its famous 24-hour broth and Luke Luk Dumplings serving up epic Singapore chilli crab and laksa dumplings, packed with big flavours in every bite.
Luke’s take on the traditional banh mi at Madam Banh Mi, gives customers a journey through regional Vietnam. His signature bo kho will feature a tender braised Wagyu beef brisket on a crunchy baguette with traditional trimmings, dunked into a bright fresh salsa.

Mark fires up the grill at Little Midden, drawing on Australian indigenous flavours with a seafood repertoire featuring his sensational smoked blue gum barramundi and bell pepper skewers, seasoned with a touch of saltbush and pepperberry.
To deliver an unforgettable food-first experience, Hay St Market at Paddy’s has teamed up with artisanal traders who are true masters of their craft. Joining the market is Tim Casey, a specialist butcher with more than 50 years of experience, including as former Head Butcher at Rockpool, now bringing his expertise to Love Me Tender.
Christina Murphy, a talented cheesemonger who honed her craft in the finest fromageries in Paris, will curate The Cheese Table, offering a selection of cheese and accompaniments from around the world. At The Signorelli Bros greengrocer, Frank Canturi, a seasoned expert with generations of experience in the fresh produce industry, will provide the best local and seasonal offerings.

To celebrate Australia’s melting pot of cultures, Hay St Market traders will showcase flavours from around the world. Visitors can expect to taste:

•The traditions of Greece at Nico’s Cypriot Chargrill, will feature housemade sheftalies (lamb and pork sausages seasoned with cinnamon, onions and mint) and crispy loukamades drizzled with lavender honey, cinnamon or even a miso butterscotch sauce.
•The sell-out 11-hour smoked BBQ beef brisket pie, along with other savoury favourites from The Pie Guy by Broomfields.
•The Fish Co offering a dedicated sushi and sashimi section, an oyster bar, an array of fresh prawns and a live filleting station.
•Authentic Mexican flavours at Taco Nixtamal with tortillas made using the traditional nixtamal technique and a unique salsa featuring three different types of chilli.
•European-inspired flavours at El Mercado Spanish Deli (stocking the finest Losada olives, 25-year-old aged Pedro Ximinéz vinegars or Don Bocarte Cantabric Anchovies), Mika’s Deli featuring Polish and continental delicacies and Italian classics at Pasta E Basta, Pizzarina and Biaggio Coffee and Cannoli with cannoli piped to order.
•Middle Eastern favourites including a crispy gozleme from GozleME and traditional shawarma with housemade Saj bread from Najla’s Lebanese Street Food.
•Smashed burgers with a special burger sauce from Burger Box and Gigi’s Hotdogs which includes an Asian-inspired hot dog with a pig’s head sausage sourced from LP’s Quality Meats.
•Handmade pastries and artisan baked goods from Thomas Hay Bakery and Paddy’s Patisserie.
•Seasonal salads made fresh daily from The Health Lab.
•Specialty coffee roasted in-house with Genovese’s finest beans, delivering bold, rich flavours in every cup at Hay St Roasters.
•Cans & Crates features more than 180 canned drinks from around the world, including RTDs, cocktails, wine, beer and non-alcoholic options from Australia, Japan, Italy, Korea, Mexico and beyond. Step back in time, visit Traders Bar, where nostalgic drinks are created, craft brews, and regional wines take centre stage.
