Cocktail of the Week from Park & Cove’s Luca Pagliericcio

Set within the canopy of Noosa’s abundant treetops at the meeting of land and sea, Park & Cove on Viewland Drive is where locals gather, drink and dine. Perched on the second floor of Peppers Noosa Resort & Villas, uncover the layers of Noosa as you sit back, breathe out and reconnect. Executive Chef Andrew Wilcox and his talented team craft a menu to showcase seasonal produce grown around the Sunshine Coast with an ever-changing selection of dishes to tantalise taste buds.

Luca Pagliericcio recommends trying the Lemon Cheesecake cocktail on your next visit:

"One taste of the lemon cheesecake cocktail is like sipping on pure sunshine, the fresh fruity flavour reminiscent of Summer days. Don't let the name fool you...this is one cocktail you won't find on the drinks menu - it is part of Park & Cove's Liquid Dessert range!”

Tangy and sweet, the drink indulges the tastebuds with a bright burst of zest with Limoncello and lemon juice, balanced by a velvety smooth creaminess that makes for a sweet treat with just the right amount of richness.

"It’s Summer served in a glass, guaranteeing sweetness that brightens any hour of the day,” Luca says. "The beauty of the lemon cheesecake cocktail is its versatility. It’s a standalone sip, a between-course cocktail, an after-dinner treat.”

More often than not, you run out of room by the time the dessert menu rolls out. At this stage, traditional cheesecake can be too dense to consider – but that isn’t the case with this cocktail.

"The reimagined dessert brings the same levels of flavour and satisfaction in a lighter, brighter way, leaving all the more room for treating yourself.”

Park & Cove’s Liquid Dessert range offers beach lovers and holiday-goers a new way to enjoy those indulgent moments – no spoon required. The best part of the new cocktail creations? You can have your cake and drink it too – no need to wait for the final course with these desserts.
