With millions of Australians preparing to come together over the Easter long weekend, seafood is set to take centre stage as a delicious and traditional choice for celebrations.
For 60% of Australians, Easter is all about bringing family together, making it the perfect time to enjoy the best in Australian seafood. Tassal’s resident Chef, Guy Turland, has crafted easy-to-prepare recipes that will add a touch of luxury to any gathering this long weekend.

Easter is Australia’s second-biggest seafood season and demand for fresh Aussie Tiger prawns, barramundi and salmon is expected to surge ahead of Easter. In fact, 42% of Aussies buy seafood in the lead-up to Easter, with 2,128 tonnes of seafood expected to be purchased by Australian households during this time. During the past 3 years, prawn sales during the month of Easter have increased by an astonishing 17.5%.
This surge in sales is driven by Australia’s love affair with Tiger prawns which represent more than half of all prawn sales over the last three Easter periods.

Guy says: "Easter is all about bringing loved ones together over good food. My hack to make sure you don’t need to spend hours in the kitchen, is to create something that will wow a crowd but is super easy to put together. This Easter, I’m sharing my seafood platter loaded with goodies including my herb-crusted Tassal BBQ barramundi, chilli and lime salmon skewers, flatbread, fresh cooked Aussie Tiger prawns, hot smoked salmon peppercorn and smoked salmon, that are perfect for sharing!
"Whether you’re celebrating Easter or just enjoying the long weekend with friends and family, it’s the perfect time to make great memories together through the love of food.”

For those looking to balance indulgence with healthy eating over the long weekend, Tassal’s resident dietitian Susie Burrell shares her expert tips on how to enjoy the best of both worlds.

•Swap milk chocolate for dark chocolate – Easter is the time to indulge in a bit of chocolate but this year, your chocolate intake can protect you from heart disease if you swap milk chocolate for a quality dark chocolate. As a rich source of fibre, iron and magnesium, it’s an easy and delicious swap.
•Swap processed meat with fresh seafood – seafood is rich in protein and healthy Omega-3 fatty acids, so try swapping out processed meat for some delicious fresh barramundi or salmon.
•Sway heavy sauces for a lighter option – don’t drown your prawns in heavy-based sauces, instead opt for a Thia lime sweet chilli sauce or a Greek yoghurt herbed dipping sauce to keep it light and enhance the flavour of the prawns.
