Brisbane's award-winning Settimo restaurant is delighted to welcome its new Chef de Cuisine, David Ruggiero, an internationally regarded kitchen maestro whose vibrant dishes capture the essence of Italy's culinary heritage.
The Italian-born Chef joined Settimo on October 1, bringing with him decades of global experience, including stints at London's iconic Baglioni Hotel and Rome's Sheraton Golf Hotel. David's deep love for his home country's authentic flavours, his passion for fresh and seasonal produce and his culinary creativity perfectly complement Settimo's exquisite Amalfi Coast-inspired cuisine.
Brisbane’s in for a treat this month when David is joined by Settimo founder and leading Australian Chef Guy Grossi for two unmissable events.
Join Guy and David for an extraordinary evening of tradition and flavour on Thursday, October 17 as the two Chefs pay homage to the vibrant culinary history of Puglia, the home region of Guy’s Papa.
From the thoughtfully curated menu to the expertly matched Puglian wines, this is a celebration of rustic charm, bold flavours and the warmth of Italian hospitality.
Guy will guide dinners through an indulgent feast, starting with the region’s iconic focaccia barese and velvety fava bean purée, on to cozze gratinate, succulent polipo e patate, panzerotti stuffed with tomato and mozzarella, cavatelli paired with fresh frutti di mare, U' cutturidd lamb stew and pepperoni imbottiti before the sweet finale, pasticcioto leccese.
