Cocktail of the Week from Hide Steak & Bar


Discover the art of dry-aging at Hide Steak & Bar on Morgan Street in Wagga Wagga. Using Wagyu fat-washed whisky which is ridiculously smooth, this drink has a silky rounded texture to it and the blood orange oleo brings a bright subtle tang that sparks some unexpected excitement, bringing a new edge to an Old Fashioned.

"Sarn wanted to utilise the unique byproducts in Hide’s kitchen to elevate our bar offerings,” Darren explains. "I love a good Old Fashioned and Sarn was drawn to the idea of fat-washing a nice whisky.

"This was a playful experiment at first, we found a beautiful blend of flavours when using Angostura orange bitters, but opted for the classic aromatic bitters in the end with the delightful orange note coming instead from a blood orange oleo.”

Being an obvious spin on an Old Fashioned, as a collaboration between the kitchen and the bar, Darren says they wanted to put a spotlight on the use of Wagyu fat-washed whisky, the name Old Wagyu felt right.

"Given its popularity, we have found the name rolls off the tongue with a familiarity that has established it as a pillar cocktail of our signature range.

"We had a Highland cow ice stamp custom-made for this cocktail and I realised later that Glenfiddich is a Highland Scotch. I haven’t landed one yet but I am convinced there is potential there for a supreme Dad joke!”
